Family Recipes


Our life stays way too busy!  So when I need a quick meal that doesn’t involve a drive through or frozen chicken product, French Bread Pizza is my go to dinner fix.  We keep ours pretty simple.  That is what I love about this recipe!  You can fix it how ever you like topping or ten toppings…you can’t go wrong.

  • 1 loaf of french bread (I usually cut the loaf in half since my family only needs a half for a meal.)
  • 1 jar of pizza sauce
  • 1 bag of shredded mozzarella cheese
  • toppings of your choice

Cut the loaf open (length-ways, like you are making a poboy) and lay open on a baking sheet.  Warm the bread in the oven on 350 for 5-8 minutes.  Spread your pizza sauce on, add cheese and toppings of your choice.  Bake at 350 for 12-15 minutes, or until cheese is melted and edges begin to turn golden brown.

If you have a picky eater like I do, get the kids in involved in this one and let them help pick what toppings they like.  You be surprised with a rare ‘happy plate’ come dinner time!




Happy Valentine’s Day!!  I hope everyone’s day is filled with love!  I’m just checking in to let you all know that the Chicken Taco Chili was a HUGE HIT!!  Everyone LOVED it!  It has been added to our monthly menu rotation.  My husband even took left-overs to lunch the next day for him and his friend he coaches with, and they both really enjoyed it.  I promise you won’t be disappointed with this recipe!



Okay, I’m trying a new recipe with the family tonight that I found on Pinterest.  It’s called Chicken Taco Chili.  I’ll let ya know how it turns out and what the critics have to say about it.  It def. smells good!

I’m so excited to be able to share with you some of my family’s favorite recipes.  I promise what you find here will be practical.  By practical, I mean affordable and enjoyable.  I have a very picky family, and we live on a tight budget, so I promise I won’t steer you wrong.

The first recipe I want to share is my husband’s very favorite:

Tator – Tot Casserole

  • 1lb ground, cooked turkey
  • 2 bags of tator tots
  • 1 can cream of mushroom soup
  • 1can (small) evaporated milk
  • 1 can cream of chicken

Brown meat and place in a large casserole dish.  Cover with tator tots.  Mix soup and evaporated milk.  Pour over top.  Bake at 350 degrees for an hour and fifteen minutes, or until tots become golden brown.

*This feeds my family of 3 for two days worth of lunches and dinner, so it does make a lot.  My husband is a huge meat eater, and I am not much of a meat eater, so I usually do one corner of the casserole without meat for myself, which gives my husband more meat.  If your family likes a lot of meat, you might consider using 2lbs rather than one.  Also, we typically only use 1.5 bags of tator tots, rather than the full 2.  That makes our tots go a bit farther for meals, too.  I also only use 1/2 of the can of cream of mushroom as my family doesn’t care for cream of mushroom.  We also like to top ours with low-fat cheese sometimes.  But that is why I LOVE this recipe.  It is simple, affordable, and SUPER flexible!  Give it a try and let me know how you liked it.
